  • 1/4 cup White granulated sugar
  • 1 tsp Salt
  • 10 TBSP Unsalted butter (cubed and room temperature)

Cinnamon Filling

  • 1/2 cup Unsalted butter (room temperature)
  • 3/4 cup Brown sugar (packed, light or dark)
  • 1 TBSP Ground cinnamon
  • 1/4 tsp Ground nutmeg

For Baking

  • 1/2 cup Heavy cream

Topping

  • 1 TBSP Unsalted butter (room temperature)
  • 1 TBSP Apple cider
  • 1/2 cup White granulated sugar
  • 2 tsp Ground cinnamon

Glaze

  • 1 cup Powdered sugar (sifted)
  • 2 TBSP Apple cider

Instructions

  1. Reduce Apple Cider: In a saucepan over medium-high heat, heat 1 cup apple cider until it reduces down to 1/2 cup. Pour into a bowl and allow it to cool completely.
  2. Activate Yeast: Warm 1/2 cup milk to 110℉ and sprinkle the active dry yeast on top. Let it sit for 10 minutes until foamy.
  3. Prepare Dry Ingredients: In a large bowl, sift 4 1/2 cups all-purpose flour. Add 1/4 cup white sugar and 1 tsp salt. Add 10 TBSP cubed unsalted butter and knead with a pastry cutter or your hands until butter pieces are pea-sized.
  4. Mix Dough: Add the cooled reduced apple cider, milk-yeast mixture, and lightly beaten eggs to the flour mixture. Using a stand mixer fitted with a dough hook, mix on low speed until dough starts to form. (Refer to notes for hand mixing.)
  5. Knead Dough: Increase mixer speed to medium and knead for 5 minutes. Spray a large bowl with nonstick spray and place dough inside.
  6. First Rise: For immediate use: Preheat oven to 200℉, turn it off, place dough bowl inside with oven door cracked open, cover with a towel, and let rise for 1 hour. For overnight rise: Cover with foil or plastic wrap and refrigerate overnight.
  7. Make Filling: In a small bowl, beat 1/2 cup room temperature unsalted butter with 3/4 cup brown sugar, 1 TBSP cinnamon, and 1/4 tsp nutmeg until smooth and creamy.
  8. Roll Dough: On a lightly floured surface, roll dough into a 1/4 inch thick large rectangle.
  9. Spread Filling: Use an offset spatula to spread the cinnamon-sugar filling evenly over the dough, reaching all edges.
  10. Form Rolls: Roll dough log starting from the short side. Trim uneven ends, then slice into 9 equal pieces.
  11. Second Rise: Spray a 9×13 inch pan with nonstick spray. Arrange rolls in the pan, cover with a towel, and let rise for 20 minutes.
  12. Prepare to Bake: Preheat oven to 375℉. Pour 1/2 cup heavy cream evenly around the rolls in the pan (some cream may cover tops).
  13. Bake: Bake for 23-27 minutes, or until tops are golden brown.
  14. Rest Rolls: Let the rolls sit in the hot pan for 10 minutes after baking.
  15. Prepare Topping: Melt 1 TBSP unsalted butter with 1 TBSP apple cider. In a small bowl, mix 1/2 cup white sugar and 2 tsp cinnamon.
  16. Apply Topping: Brush the butter-apple cider mixture over the warm rolls using a pastry brush, then generously sprinkle the cinnamon-sugar mixture on top.
  17. Make Glaze: Sift 1 cup powdered sugar into a small bowl. Add 2 TBSP apple cider and whisk until smooth.
  18. Drizzle Glaze: Drizzle the glaze over the cinnamon rolls before serving.
