  • Juice from 1 lime

Instructions

  1. Sauté onions: Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the finely chopped white onion and cook for 2 to 3 minutes, stirring occasionally, until the onion is softened and translucent.
  2. Cook ground beef: Add the ground beef to the skillet with the onions. Cook, breaking up the meat with a spoon, until it is fully browned and cooked through, about 7 to 10 minutes. Drain off any excess grease from the skillet if necessary.
  3. Add seasoning and chiles: Stir in the canned green chiles, the packet of taco seasoning, and ¼ cup water. Simmer the mixture for a few minutes until it thickens and evenly coats the beef. Remove the skillet from heat.
  4. Preheat oven and prepare tortillas: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Wrap the corn tortillas in a damp paper towel and microwave them for about 30 seconds to soften, preventing cracking when folded.
  5. Assemble tacos: Lay the softened tortillas flat on the prepared baking sheet. Spoon the beef mixture onto one half of each tortilla, then sprinkle shredded taco blend cheese over the beef. Fold the other half of the tortilla over the filling to form a taco.
