Ingredients

Scale

Salmon

  • 4 salmon fillets
  • Salt and black pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/8 tsp cayenne pepper
  • 1 tbsp extra virgin olive oil

Avocado Mash

  • 2 avocados, mashed
  • 1 lime zest, grated
  • 1 lime, juiced
  • Salt to taste
  • Chopped dill, to taste
  • 1/2 red onion, chopped

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to prepare it for baking the salmon fillets evenly.
  2. Prepare the salmon: Place the salmon fillets in a baking dish. Season them with salt, black pepper, garlic powder, paprika, and cayenne pepper. Drizzle and spread the extra virgin olive oil over the fillets, ensuring they are well coated.
  3. Bake the salmon: Put the baking dish with the seasoned salmon into the preheated oven. Bake the fillets for 12-15 minutes until the salmon is fully cooked and flakes easily with a fork.
  4. Make the avocado mash: While the salmon bakes, mash the avocados in a bowl until smooth but still a bit chunky. Add the grated lime zest and squeeze in the fresh lime juice. Mix in salt and chopped dill thoroughly to balance flavors.
  5. Serve: After baking, remove the salmon from the oven. Spoon the prepared avocado mash evenly over each salmon fillet. Finally, sprinkle the chopped red onion on top for a fresh and crunchy finish.

Notes

  • For extra heat, add more cayenne pepper or sprinkle chili flakes over the avocado mash.
  • Use ripe but firm avocados for the best texture in the mash.
  • The lime zest and juice can be adjusted to personal taste to add more tanginess.
  • Serve with a side of steamed vegetables or a fresh green salad for a complete meal.
  • Leftover avocado mash can be stored in an airtight container for up to a day to avoid browning.
