Ingredients

Scale

The Cake

  • 2½ cups (300g) sifted cake flour
  • ½ teaspoon (3.5g) salt
  • 2 tablespoons (15g) cocoa powder (regular or Dutch-processed)
  • ½ cup (113g) unsalted butter, at room temperature
  • 1½ cup (300g) granulated sugar
  • ½ cup (120g) sour cream
  • ¾ cup (180g) oil
  • 3 large eggs
  • ½ cup (120ml) buttermilk
  • 1 tablespoon (15ml) vinegar
  • 2 teaspoons (10ml) vanilla extract
  • 2 tablespoons (30ml) royal blue food coloring
  • ½ teaspoon (2.5ml) violet food coloring
  • 1 teaspoon (5g) baking powder
  • 1 teaspoon (6g) baking soda
  • 2 teaspoons (10ml) water

Cream Cheese Frosting

  • 10 tablespoons (142g) unsalted butter, at room temperature
  • 10 ounces (285g) cream cheese
  • 1½ teaspoons (7ml) vanilla extract
  • 6 cups (720g) powdered sugar

Instructions

  1. Prepare Dry Ingredients: Combine the sifted cake flour, salt, and cocoa powder in a medium bowl and set aside to ensure even distribution of dry ingredients.
  2. Preheat Oven and Prep Pans: Preheat the oven to 350℉ (177℃). Grease three 9-inch round baking pans with baking spray and line them with parchment paper if desired, setting them aside for batter.
  3. Cream Butter and Sugar: Using a stand mixer on high speed, cream the unsalted butter and granulated sugar together until the mixture is fluffy and pale, approximately 4 minutes.
  4. Add Wet Ingredients: Add sour cream and mix for an additional minute, then incorporate the oil and beat for another minute. Add eggs one at a time, beating well after each addition.
  5. Incorporate Flavorings and Color: Pour in buttermilk, vinegar, and vanilla extract and mix thoroughly. Add royal blue and violet food coloring until you achieve the desired blue velvet color.
  6. Add Dry Mixture and Leavening: Gradually add the dry flour mixture to the wet ingredients, mixing gently. Combine baking soda and baking powder with water, then fold this into the batter carefully, scraping down the bowl sides to ensure uniformity.
  7. Divide Batter and Bake: Evenly distribute the batter into the prepared pans, tapping the pans on the counter to release air bubbles. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the Cake Layers: Let the cakes cool in their pans for 10-15 minutes before inverting onto wire racks. Let cool completely, wrap each layer in cling wrap, and chill in the refrigerator for at least one hour or overnight to firm up for frosting.
  9. Prepare Cream Cheese Frosting: Whisk together cream cheese, butter, and vanilla extract with an electric mixer until creamy. Gradually sift in powdered sugar, mixing continuously until smooth and spreadable.
  10. Assemble the Cake: Level any domes on cake layers with a long knife for flat stacking. Place one cake layer on a serving plate, spread about ¾ to 1 cup of frosting evenly over the top. Repeat with remaining layers.
  11. Frost and Decorate: Cover the entire cake with the remaining frosting, smoothing the sides and top. Finish by piping extra frosting decorations and optionally garnish with cake crumbs for a professional touch.

Notes

  • For best results, chill cake layers overnight to help with easier frosting and cleaner layers.
  • Use good quality food coloring to achieve the vibrant blue hue without altering the cake’s texture.
  • Make sure all wet ingredients are at room temperature for smooth mixing and an even batter.
  • Check the cake’s doneness before removing from the oven to avoid overbaking and dryness.
  • Allow the cake to come to room temperature before slicing to prevent crumbs and maintain structural integrity.
