  • 8 ounces cream cheese
  • 1 (14 ounce) can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 egg yolk
  • 1 cup blueberries (or raspberries)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper or lightly coat it with cooking spray to prevent sticking.
  2. Make Crust & Crumble Mixture: In a large bowl, cream together the softened butter, sugar, and brown sugar until smooth. Stir in baking soda and salt, then gradually mix in flour and quick oats until the mixture is combined. Press half of this mixture firmly into the bottom of the prepared pan to form the crust. Bake for 13 minutes to set.
  3. Prepare Cream Cheese Filling: While the crust bakes, place cream cheese in a large bowl and beat until smooth and creamy. Gradually whisk in the sweetened condensed milk until thoroughly incorporated. Add vanilla extract and egg yolk, mixing well to create a smooth filling.
  4. Assemble Bars: Remove the crust from the oven and pour the cream cheese filling evenly over it. Carefully spread the filling to cover the crust. Sprinkle the fresh blueberries evenly over the top, then crumble the remaining oat mixture over the berries and gently press down to adhere.
