Ingredients

Scale

Oatmeal Crust and Topping

  • 2 1/4 cups Old Fashioned rolled oats
  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups brown sugar
  • 1 cup butter (2 sticks), melted
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt

Blueberry Filling

  • 3 cups blueberries (fresh or frozen)
  • 1/4 cup granulated sugar
  • 1 tablespoon corn starch

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to ensure it reaches the right temperature while you prepare the batter.
  2. Prepare Oatmeal Mixture: In a large mixing bowl, combine the oats, flour, brown sugar, baking soda, and salt. Melt the butter and pour it over the dry ingredients. Stir until the mixture becomes crumbly and fully incorporated.
  3. Form the Crust: Press two-thirds of the oatmeal mixture firmly into the bottom of a 9×13 inch baking pan, creating an even layer. Save the remaining one-third of the mixture for the topping.
  4. Mix Blueberry Filling: In a separate bowl, toss the blueberries with granulated sugar and corn starch to coat evenly. This will help thicken the filling and balance the sweetness.
  5. Assemble Bars: Pour the blueberry mixture evenly over the bottom oatmeal crust. Then crumble the reserved oatmeal mixture over the blueberry layer to create the topping.
  6. Bake: Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown and the filling is bubbling.
  7. Cool and Serve: Remove the bars from the oven and allow them to cool completely in the pan. Once cooled, cut into bars and serve.

Notes

  • For best results, use fresh blueberries; if using frozen, do not thaw before mixing.
  • You can substitute gluten-free flour to make this recipe gluten-free.
  • Store the bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • These bars freeze well; thaw overnight in the refrigerator before serving.
  • To add a nutty crunch, sprinkle chopped walnuts or almonds over the blueberry layer before topping.
