Blueberry Compote

  • 1 cup Greek yogurt
  • 1/2 tsp vanilla extract
  • Additional honey or maple syrup, to taste (optional)

Instructions

  1. Make the blueberry compote: In a small saucepan over medium heat, combine blueberries, honey or maple syrup, and lemon juice. Simmer gently for about 5 minutes until the blueberries soften and begin to break down, creating a syrupy mixture.
  2. Thicken the compote (optional): If a thicker compote is desired, dissolve the cornstarch in water, then stir it into the warm blueberry mixture. Continue cooking briefly until the compote thickens. Remove from heat and allow to cool completely.
  3. Prepare the yogurt base: In a mixing bowl, whisk together Greek yogurt and vanilla extract until smooth and creamy. Taste and add extra honey or maple syrup to sweeten if preferred.
  4. Fill the molds: Spoon the yogurt mixture into silicone molds or mini muffin tins, filling each about three-quarters full to allow room for swirling and freezing.
  5. Add the blueberry swirl: Dollop a spoonful of the cooled blueberry compote on top of each yogurt-filled mold. Use a toothpick or skewer to gently swirl the compote into the yogurt, creating a marbled effect.
  6. Freeze the bites: Place the molds in the freezer and freeze for at least 3 hours, or until the bites are solidly frozen.
  7. Serve and store: Carefully remove the frozen yogurt bites from the molds and store them in an airtight container in the freezer. For best texture, let them sit at room temperature for 2–3 minutes before eating.
