This Bruschetta Chicken Casserole is a delicious, easy-to-make meal combining juicy chicken pieces with fresh tomatoes, garlic, and basil, topped with melted mozzarella cheese and a hint of balsamic vinegar. It’s a flavorful, comforting dish perfect for dinner or meal prep.

Ingredients

Scale

Chicken and Seasoning

  • 1 lb. chicken breasts or tenders, cut into bite sized pieces
  • 1 Tbsp avocado oil or olive oil
  • Sea salt, about 1/4 teaspoon
  • Ground black pepper, about 1/4 teaspoon

Bruschetta Topping

  • 6 ripe Roma tomatoes, chopped and lightly sprinkled with sea salt
  • 3 fresh garlic cloves, crushed or chopped
  • 1 tsp dried oregano
  • 2 Tbsps high quality balsamic vinegar
  • 1 cup shredded mozzarella cheese
  • A small handful of fresh basil leaves, chopped

Others

  • Cooking spray (to grease the baking dish)

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the casserole.
  2. Cook Chicken: Heat avocado or olive oil in a skillet over medium-high heat. Add the chicken pieces and season with sea salt and black pepper. Cook, stirring occasionally, until the chicken is golden brown on the sides and almost cooked through.
  3. Prepare Baking Dish: Spray or brush an 8×8 baking dish with oil to prevent sticking. Transfer the partially cooked chicken into the baking dish.
  4. Add Toppings: Top the chicken evenly with chopped Roma tomatoes (lightly salted), dried oregano, crushed garlic, and a drizzle of balsamic vinegar. Then sprinkle the shredded mozzarella cheese over the top.
  5. Bake: Place the casserole in the preheated oven uncovered. Bake for 18 to 20 minutes, until the cheese is melted and bubbly and the sauce is bubbling at the bottom.
  6. Rest and Garnish: Remove the casserole from the oven and cover it. Let it rest for 5 minutes to let flavors meld. Garnish with freshly chopped basil leaves before serving.

Notes

  • Use fresh, ripe Roma tomatoes for the best flavor.
  • Avocado oil or olive oil can be used interchangeably, depending on preference.
  • Allowing the casserole to rest after baking helps redistribute juices and intensifies the flavors.
  • If you prefer, substitute mozzarella cheese for a low-fat alternative to reduce calories and fat content.
  • Serve warm with a side of crusty bread or a fresh green salad for a complete meal.
