  • 2 cups (280 g) rotisserie chicken, finely diced
  • 4 ounces cream cheese, softened
  • ¼ cup buffalo sauce, plus extra for serving
  • 1 cup (113 g) sharp cheddar cheese, shredded
  • 1 cup (113 g) mozzarella cheese, shredded
  • 1 packet (1 ounce / 2 tablespoons) dry ranch seasoning mix

Wrapping and Serving

  • 8 egg roll wrappers
  • Water, for assembly
  • Nonstick cooking spray
  • Ranch dressing or blue cheese dressing, for serving

Instructions

  1. Prepare the filling: In a large bowl, combine the finely diced rotisserie chicken, softened cream cheese, buffalo sauce, shredded sharp cheddar cheese, shredded mozzarella cheese, and dry ranch seasoning mix. Stir thoroughly to blend all ingredients evenly.
  2. Assemble the egg rolls: Working with one egg roll wrapper at a time, place about ⅓ cup of the chicken mixture in the center of the wrapper.
  3. Roll the egg rolls: Lightly moisten the edges of the wrapper with water. Fold the bottom corner up over the filling, then fold in the right and left corners toward the center, pressing gently to seal. Finally, roll the wrapper tightly upward until the filling is fully enclosed and the edges are sealed.
  4. Preheat the air fryer: Set the air fryer to 400°F (204°C) and let it heat up.
  5. Air fry the egg rolls: Place the egg rolls in the air fryer basket in a single layer (work in batches if necessary). Spray the tops with nonstick cooking spray. Air fry for 3–4 minutes, then carefully flip each egg roll over, spray again with cooking spray, and continue air frying for another 3–4 minutes or until they are golden brown and crispy.
  6. Serve: Remove the egg rolls from the air fryer and serve hot with ranch or blue cheese dressing and extra buffalo sauce if desired.

Notes

  • Be sure to seal the egg rolls tightly to prevent the filling from leaking during cooking.
  • If you don’t have an air fryer, these can be baked in a preheated oven at 425°F (220°C) for about 15-20 minutes, turning halfway through.
  • Use rotisserie chicken for convenience, but cooked shredded chicken breast works as well.
  • Adjust the amount of buffalo sauce to your preferred spice level.
  • Leftover egg rolls can be refrigerated and reheated in the air fryer for best texture.
