Scale

Dip Ingredients

  • 16 ounces (two 8-ounce blocks) cream cheese, softened to room temperature
  • ½ cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ½ cup packed, finely shredded carrots (squeezed dry to remove excess moisture)
  • ¼ cup finely chopped pecans

Optional Serving Items

  • Graham crackers
  • Cinnamon sugar pita chips
  • Fresh apple slices (red or green)

Instructions

  1. Beat Cream Cheese: In a large mixing bowl, add the softened cream cheese and beat on medium-high speed with a handheld mixer for 1-2 minutes until the mixture is light, fluffy, and smooth with no lumps remaining.
  2. Add Spices and Sugar: Add light brown sugar, ground cinnamon, ground ginger, ground nutmeg, and ground cloves to the cream cheese. Beat again for 30 seconds to 1 minute until fully combined and well incorporated.
  3. Prepare Carrots: Place the shredded carrots between 2-3 layers of large paper towels and firmly squeeze to remove as much moisture as possible. Set the dried shredded carrots aside.
  4. Combine Ingredients: Gently fold the dried shredded carrots and finely chopped pecans into the cream cheese mixture using a rubber spatula until they are evenly distributed throughout the dip.
  5. Chill the Dip: Cover the bowl tightly with plastic wrap and refrigerate for 1-2 hours to allow the flavors to meld and the dip to firm up slightly.
  6. Serve: After chilling, transfer the carrot cake dip to a serving bowl and serve with optional dipping items such as graham crackers, cinnamon sugar pita chips, and fresh apple slices.

Notes

  • Be sure to squeeze the shredded carrots thoroughly to prevent the dip from becoming watery.
  • The dip can be made up to one day in advance and stored covered in the refrigerator.
  • For added texture, you can toast the pecans lightly before adding them to the dip.
  • This dip is best served chilled to allow the flavors to develop fully.
