Instructions

  1. Cook the Tortellini: Bring a large pot of salted water to a boil. Add the refrigerated cheese tortellini and cook according to the package instructions until al dente. Drain and set aside once cooked.
  2. Prepare Mushrooms and Sage: While the tortellini cooks, clean and slice the cremini mushrooms and chop the fresh sage.
  3. Crisp the Sage: Approximately 6-7 minutes before the tortellini finishes cooking, heat 1 tablespoon of butter and the olive oil in a skillet over medium-high heat. When hot, add the chopped sage leaves and cook for about one minute until crispy. Remove the sage from the pan and set aside.
  4. Sauté Mushrooms and Garlic: Add another tablespoon of butter to the same skillet. Add the sliced mushrooms and minced garlic. Sauté for about 5 minutes, stirring occasionally, until the mushrooms are browned and tender.
  5. Combine and Finish: Add the drained tortellini, remaining tablespoon of butter, grated parmesan cheese, and the crispy sage back to the pan. Toss gently until everything is well combined and evenly coated. Season with salt and pepper to taste.
  6. Serve Immediately: Transfer the tortellini mixture to plates or bowls and serve hot for the best flavor and texture.
