Ingredients

Scale

Cauliflower Mixture

  • 1 medium head of cauliflower, cut into florets
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs (regular or panko)
  • 2 tablespoons all-purpose flour
  • 2 tablespoons chopped fresh chives (plus extra for garnish)
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Frying

  • Olive oil or vegetable oil, for frying

Instructions

  1. Steam Cauliflower: Steam the cauliflower florets until tender, about 10 minutes. Once soft, mash the cauliflower until smooth but still retaining a slight texture to ensure good patties.
  2. Combine Ingredients: In a large mixing bowl, combine the mashed cauliflower with eggs, cheddar cheese, Parmesan cheese, breadcrumbs, flour, chopped chives, minced garlic, salt, and black pepper. Mix thoroughly until evenly incorporated.
  3. Form Patties: Shape the mixture into small patties approximately 2 inches wide and 1/2 inch thick for even cooking and a perfect bite-sized snack.
  4. Heat Oil and Fry: Heat a thin layer of olive or vegetable oil in a skillet over medium heat. Fry the patties in batches, cooking each side for 3 to 4 minutes until they turn golden brown and develop a crispy crust.
  5. Drain and Garnish: Remove the cooked patties and drain them on paper towels to remove excess oil. Garnish with additional chopped chives before serving. Enjoy them warm with your favorite dipping sauce.

Notes

  • For a gluten-free option, substitute the breadcrumbs with gluten-free breadcrumbs.
  • You can replace cheddar cheese with mozzarella or another cheese of your preference.
  • Adjust salt and pepper to taste.
  • Make sure not to over-mash the cauliflower to keep some texture in the patties.
  • Serve with sour cream, ranch, or spicy aioli for dipping.
