Ingredients

Scale

Main Ingredients

  • 6 cups rice Chex cereal
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 3/4 cup granulated sugar
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips

Instructions

  1. Prepare the baking sheet. Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking, then pour the rice Chex cereal into a large mixing bowl and set it aside.
  2. Make the peanut butter mixture. In a medium saucepan, over medium-low heat, combine the light corn syrup, creamy peanut butter, and granulated sugar. Stir continuously for 2-3 minutes until the mixture is melted, smooth, and fully combined without boiling.
  3. Coat the cereal. Quickly pour the warm peanut butter mixture over the rice Chex cereal in the mixing bowl. Stir thoroughly to evenly coat all cereal pieces.
  4. Form clusters. Using a spoon, scoop the coated cereal mixture into clusters onto the prepared baking sheet. This will form the base of your Scotcheroos.
  5. Melt the chocolate and butterscotch chips. In a microwave-safe bowl, combine the semi-sweet chocolate chips and butterscotch chips. Microwave in 30-second intervals, stirring well after each, until the mixture is fully melted and smooth.
  6. Top the clusters. Spoon the melted chocolate and butterscotch mixture evenly over each cereal cluster, covering the tops.
  7. Set the treats. Allow the chocolate topping to cool and set at room temperature before serving. This may take about 30 minutes to an hour.

Notes

  • Use silicone baking mats or parchment paper to avoid sticky messes and ensure easy removal of treats.
  • For a quicker melt, you can gently melt the peanut butter mixture in a microwave-safe bowl, but stir frequently to avoid burning.
  • You can substitute creamy peanut butter with natural peanut butter, but the texture may be slightly different.
  • Store Scotcheroos in an airtight container at room temperature for up to a week.
  • For a festive touch, add chopped nuts or colorful sprinkles on top before the chocolate sets.
