Lasagna Rolls
Filling
- 2 cups cooked chicken, shredded
- 2 cups ricotta cheese
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Sauce and Topping
- 3 cups Alfredo sauce
- 1 cup shredded mozzarella cheese (for topping)
- Fresh parsley, chopped (for garnish)
- Prepare the Noodles: Boil the lasagna noodles in salted water until they are al dente, about 8 to 10 minutes. Drain and lay them flat on a clean kitchen towel or parchment paper to prevent sticking.
- Mix the Filling: In a large bowl, combine the shredded cooked chicken, ricotta cheese, 1 cup shredded mozzarella, grated Parmesan, garlic powder, Italian seasoning, and a pinch of salt and pepper. Mix until all ingredients are evenly incorporated.
- Assemble the Rolls: Preheat your oven to 375°F (190°C). Spread about 1 cup of Alfredo sauce evenly over the bottom of a baking dish. Lay one lasagna noodle flat and spread approximately 1/4 cup of the chicken and cheese filling evenly over the noodle lengthwise. Carefully roll up the noodle and place it seam-side down in the prepared baking dish. Repeat for all noodles.
- Top with Sauce and Cheese: Pour the remaining Alfredo sauce over the rolled noodles, ensuring they are well covered. Sprinkle the remaining shredded mozzarella cheese evenly on top for a perfect golden finish.
- Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 15-20 minutes or until the cheese is bubbly and lightly browned.
- Garnish and Serve: Once out of the oven, let the lasagna rolls cool for about 5 minutes. Garnish with freshly chopped parsley before serving. This dish pairs wonderfully with a fresh green salad or garlic bread.
Notes
- For extra flavor, you can add sautéed spinach or mushrooms to the filling.
- If Alfredo sauce is not available, you can make your own using butter, heavy cream, and Parmesan cheese.
- Lasagna noodles can be substituted with no-boil noodles, adjusting the cooking time accordingly.
- Make sure not to overcook the noodles to avoid tearing when rolling.
- This recipe can be prepared a day in advance and refrigerated before baking.
