For the Chocolate Crust:
- 1 ½ cups chocolate cookie crumbs (such as Oreo, without filling)
- ¼ cup unsalted butter, melted
- 2 tbsp granulated sugar
For the Cheesecake Layer:
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ¼ cup sour cream

- Prepare the Pan and Preheat Oven: Preheat your oven to 325°F (160°C). Line a square baking pan with parchment paper, leaving some overhang for easy lifting later.
- Make the Chocolate Crust: In a medium bowl, mix chocolate cookie crumbs, melted butter, and sugar until combined and moistened. Press the mixture evenly into the bottom of the prepared pan using the back of a spoon. Bake for 8-10 minutes, then set aside to cool slightly.
- Make the Cheesecake Filling: In a large bowl, beat the cream cheese with a hand mixer until smooth and creamy. Add sugar, vanilla, and salt, and beat until combined. Add eggs one at a time, beating well after each addition. Mix in sour cream until smooth.
- Bake the Cheesecake Layer: Pour the cheesecake filling over the baked crust and smooth the top. Tap the pan gently on the counter to release air bubbles. Bake for 30-35 minutes, or until the center is set and no longer jiggly. Turn off the oven and crack the door open slightly. Let the bars cool inside for 30 minutes to prevent cracking.
