Dough
- 3 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 2 tsp ground cinnamon
- 1/4 cup granulated sugar
- 1 cup warm milk (about 110°F/43°C)
- 2 1/4 tsp active dry yeast (1 packet)
- 1/4 cup melted unsalted butter
Filling
- 1/2 cup brown sugar, packed
- 2 tbsp unsweetened cocoa powder
- 2 tsp ground cinnamon
- 2 tbsp softened unsalted butter
- Activate yeast: In a small bowl, combine warm milk, granulated sugar, and active dry yeast. Stir gently and let it sit for about 5 minutes until the mixture becomes frothy, indicating the yeast is activated.
- Make the dough: In a large mixing bowl, whisk together the flour, cocoa powder, and cinnamon. Gradually add the yeast mixture along with melted butter, mixing until a dough forms.
- Knead and rise: Transfer dough to a floured surface and knead for 5 to 7 minutes until smooth and elastic. Place dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm spot for about 1 hour or until doubled in size.
- Prepare the filling and roll out dough: Roll out the risen dough into a rectangle approximately 16 by 12 inches. Spread the softened butter evenly over the dough surface. Mix brown sugar, cocoa powder, and cinnamon together then sprinkle evenly over the buttered dough.
- Form rolls: Starting from the long edge, tightly roll the dough into a log. Slice the log into 12 equal rolls using a sharp knife or dental floss, and arrange them in a greased 9×13 inch baking dish.
- Bake: Preheat the oven to 350°F (175°C). Bake the rolls for about 25 minutes, or until they are set and slightly firm to the touch. Remove from oven and allow to cool slightly before serving or adding glaze if desired.
Notes
- Ensure milk is warm but not hot to avoid killing the yeast.
- You can substitute brown sugar in the dough or filling with coconut sugar for a different flavor profile.
- For a richer finish, drizzle cream cheese glaze over cooled rolls.
- Store leftover rolls in an airtight container at room temperature for up to 2 days or freeze for up to a month.
- Allow dough to rise in a draft-free environment for best results.
