Ingredients

Scale

Dry Ingredients

  • ½ cup oats
  • 2 scoops vanilla protein powder (2 ounces)
  • 1 teaspoon Stevia
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon

Wet Ingredients

  • 2 egg whites (2 ounces or 6 tablespoons)
  • ⅔ cup water

Instructions

  1. Preheat the Oven: Preheat your oven to 390°F (200°C) to prepare for baking the protein cake.
  2. Blend Ingredients: Combine all ingredients except the cinnamon in a blender or food processor and blend until the batter is smooth and thick, resembling pancake batter consistency.
  3. Pour Batter and Add Cinnamon: Pour half of the batter into a small nonstick pan about 4.5 inches across. Evenly sprinkle the tablespoon of cinnamon over the batter.
  4. Add Remaining Batter: Pour the rest of the batter on top of the cinnamon layer in the pan.
  5. Create Cinnamon Swirl: Use a knife to gently swirl through the batter a few times, mixing in the cinnamon slightly to create a marbled effect.
  6. Bake and Rest: Bake in the preheated oven for 12 minutes. After baking, let it rest for a few minutes before serving to allow the cake to set and cool slightly.

Notes

  • You can substitute Stevia with another sweetener if preferred, adjusting the amount based on sweetness.
  • For a fluffier texture, you can separate the egg whites and whisk them before folding into the batter.
  • If you don’t have a small 4.5-inch pan, use any small round or square baking dish but adjust baking time accordingly.
  • This cake is best served warm and can be stored in the refrigerator for up to 2 days.
