Meat and Seasoning

  • 1 packet taco seasoning
  • 3/4 cup red enchilada sauce

Cheese

  • 2 1/2 cups Oaxaca cheese, Mexican cheese, or Monterey Jack, shredded

Tortillas and Oil

  • 10 corn tortillas
  • 1 tablespoon olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (230°C) to ensure it’s hot and ready for baking the tacos crispy.
  2. Cook Ground Beef: Heat a skillet over medium-high heat. Add the lean ground beef and cook, breaking it up with a spatula, until browned and fully cooked. Stir in the taco seasoning and red enchilada sauce. Bring the mixture to a simmer for a couple of minutes to let the flavors meld, then remove from heat.
  3. Prepare Tortillas: Wrap the corn tortillas in a damp paper towel and microwave them for 30 to 60 seconds until they become pliable and easier to fold without breaking.
  4. Assemble Tacos: Brush one side of each tortilla with olive oil. Place the tortilla on a baking sheet with the oiled side down. On half of the tortilla, sprinkle 2 tablespoons of shredded cheese, then add about 1/4 cup of the cooked beef mixture, and top with 2 more tablespoons of cheese. Fold the tortilla over the filling to form a taco.
  5. Repeat Assembly: Repeat the process with the remaining tortillas and filling, arranging the assembled tacos in a single layer on the baking sheet.
  6. Bake Tacos: Place the baking sheet in the preheated oven and bake the tacos for 16 minutes, or until the tortillas turn crispy and the cheese is fully melted and bubbly.
  7. Cool and Serve: Remove the tacos from the oven and let them cool for 3 minutes before serving to allow the cheese to set slightly and avoid burns.
