Meat and Seasoning
- 1 pound lean ground beef (90% lean)
- 1 packet taco seasoning
- 3/4 cup red enchilada sauce
Cheese
- 2 1/2 cups Oaxaca cheese, Mexican cheese, or Monterey Jack, shredded
Tortillas and Oil
- 10 corn tortillas
- 1 tablespoon olive oil
- Preheat Oven: Preheat your oven to 450°F (230°C) to ensure it’s hot and ready for baking the tacos crispy.
- Cook Ground Beef: Heat a skillet over medium-high heat. Add the lean ground beef and cook, breaking it up with a spatula, until browned and fully cooked. Stir in the taco seasoning and red enchilada sauce. Bring the mixture to a simmer for a couple of minutes to let the flavors meld, then remove from heat.
- Prepare Tortillas: Wrap the corn tortillas in a damp paper towel and microwave them for 30 to 60 seconds until they become pliable and easier to fold without breaking.
- Assemble Tacos: Brush one side of each tortilla with olive oil. Place the tortilla on a baking sheet with the oiled side down. On half of the tortilla, sprinkle 2 tablespoons of shredded cheese, then add about 1/4 cup of the cooked beef mixture, and top with 2 more tablespoons of cheese. Fold the tortilla over the filling to form a taco.
- Repeat Assembly: Repeat the process with the remaining tortillas and filling, arranging the assembled tacos in a single layer on the baking sheet.
- Bake Tacos: Place the baking sheet in the preheated oven and bake the tacos for 16 minutes, or until the tortillas turn crispy and the cheese is fully melted and bubbly.
- Cool and Serve: Remove the tacos from the oven and let them cool for 3 minutes before serving to allow the cheese to set slightly and avoid burns.
Notes
- Use fresh or store-bought shredded cheese for ease and speed.
- If you prefer a spicier taco, add a pinch of cayenne pepper or hot sauce to the meat mixture.
- For a gluten-free meal, ensure the taco seasoning packet and enchilada sauce are certified gluten-free.
- Olive oil can be substituted with avocado oil or another vegetable oil.
- Leftover tacos can be refrigerated for up to 2 days and reheated in an oven or air fryer for best crispiness.
