  • 250 g Icing Sugar

Instructions

  1. Preheat and Prepare: Preheat your oven to 175°C and line a baking tray with baking paper to prevent sticking.
  2. Mix Sugars and Butter: In a mixing bowl, whisk together the brown sugar, white sugar, and melted butter until smooth and combined.
  3. Add Egg and Vanilla: Crack in the egg and pour in the vanilla extract, whisking until the mixture is fully incorporated.
  4. Combine Dry Ingredients: Sift together the plain flour, cornflour, baking soda, baking powder, and salt, then fold this into the wet ingredients gently until there are no visible streaks of flour.
  5. Shape and Chill Dough: Roll the dough into 50g balls and place them on the prepared baking tray. Refrigerate the dough balls for 1 hour to firm up and help prevent excessive spreading during baking.
  6. Bake Cookies: Ensure that the dough balls are spaced apart on the tray to allow for spreading. Bake in the oven at 175°C for 12 minutes. Once baked, remove and allow cookies to cool completely on a wire rack before decorating.
  7. Prepare Cream Cheese Frosting: In a bowl, whisk together the softened butter, cream cheese, and icing sugar for about 5 minutes until the mixture is smooth and fluffy. Add vanilla extract and whisk to combine.
