Brownie Mixture
- 1 (18 ounce) box brownie mix (plus ingredients required on the box, usually eggs, oil, and water)
- 8 ounces full-fat, brick-style cream cheese, room temperature
Coating and Decoration
- 3 cups chocolate melting wafers
- Sprinkles for decorating
- Prepare Brownies. Follow the package instructions to bake the brownies in a 9×13 inch pan. Once baked, allow them to cool completely to room temperature.
- Scoop Brownies. Using a spoon or scoop, remove the brownie portion from the pan into a large bowl, leaving the firmer edges behind to ensure a smooth consistency for the truffles.
- Combine with Cream Cheese. Add the softened cream cheese to the bowl with the brownie crumbles. Use a hand mixer or stand mixer to beat until fully combined and smooth, with no lumps of cream cheese remaining.
- Form Truffle Balls. Roll the brownie and cream cheese mixture into 1 tablespoon-sized balls. Place these evenly spaced on a baking sheet lined with parchment paper. Freeze them for about 30 minutes or until firm and solid.
- Melt Chocolate Wafers. Place the chocolate melting wafers in a microwave-safe bowl and heat in 20-second increments, stirring between each, until the chocolate is completely melted and smooth.
- Dip and Decorate. Using a fork, dip each frozen truffle into the melted chocolate, fully coating it. Tap the fork lightly to remove excess chocolate and place the coated truffle back onto the parchment-lined baking sheet. While the chocolate is still wet, sprinkle with your choice of sprinkles for decoration.
- Set the Coating. Refrigerate the dipped truffles for 15-20 minutes to allow the chocolate coating to properly set before serving.
Notes
- Ensure the cream cheese is softened to room temperature for easier mixing and a smoother truffle texture.
- Use a cookie scoop or tablespoon to keep truffle sizes uniform for even freezing and coating.
- If you don’t have chocolate melting wafers, you can use high-quality chocolate chips or chopped chocolate, but tempering may be needed for a shinier finish.
- Freeze the truffles until solid before dipping; this prevents them from falling apart in the chocolate.
- Store finished truffles in an airtight container in the refrigerator for up to one week.
