  • 2/3 cup (130g) packed light or dark brown sugar
  • 3/4 cup (75g) almond flour
  • 1/4 teaspoon salt
  • 1 Tablespoon (15ml) light or dark corn syrup or milk
  • 1 teaspoon pure vanilla extract

  • 1/2 cup Nutella or melted chocolate

Instructions

  1. Melt Butter and Combine Ingredients: Melt the unsalted butter in a medium saucepan over low heat. Once fully melted, add brown sugar, almond flour, salt, and corn syrup or milk. Cook and whisk continuously for about 3-4 minutes until the sugar dissolves and all ingredients are combined. If the mixture starts separating, remove from heat and whisk vigorously until smooth.
  2. Add Vanilla and Let Mixture Thicken: Remove the pan from heat and whisk in the vanilla extract. The mixture will appear grainy and shiny. Let the dough sit for 5 to 10 minutes as the oven preheats; this allows the dough to thicken and cool slightly.
  3. Preheat Oven and Prepare Baking Sheets: Preheat your oven to 350°F (177°C). Line two to three large baking sheets with parchment paper or silicone baking mats to prevent sticking.
  4. Portion and Bake Cookies: Drop scant teaspoonfuls of the mixture onto the prepared sheets, spacing them about 3 inches apart. Bake in the oven for 6 to 8 minutes until the edges turn golden brown. The centers and edges will bubble and sizzle during baking.
