Ingredients

Scale

Stew

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3/4 lb top sirloin cubes
  • Salt and pepper to taste
  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion, chopped
  • 2 medium carrots, peeled and chopped
  • 1 tablespoon all-purpose flour

Mashed Potatoes

  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 3 tablespoons chives, chopped

Instructions

  1. Preheat and Brown Beef: Preheat your oven to 375°F (190°C). Heat the butter and olive oil in a pan over medium-high heat. Season the top sirloin cubes with salt and pepper, then add them to the hot pan. Brown the beef thoroughly on all sides for 6 to 8 minutes to seal in the juices.
  2. Sauté Vegetables: Add the chopped onion and carrots to the beef in the skillet. Cook together for 4 to 5 minutes until the onions are translucent and the carrots start to soften.
  3. Thicken Stew Base: Sprinkle the all-purpose flour over the beef and vegetables, stirring well to coat everything evenly. Continue to cook for 1 to 2 minutes to remove the raw flour taste and help thicken the stew.
  4. Add Liquids and Simmer: Pour in the apple cider and beef broth, stirring to combine. Bring the mixture to a boil on the stovetop.
  5. Oven Cook: Transfer the stew to an oven-safe pot or Dutch oven. Cover it tightly and place it in the preheated oven. Cook for 1 to 1 ½ hours, until the beef is tender and the flavors have melded beautifully.
  6. Prepare Mashed Potatoes: Meanwhile, peel and dice the potatoes. Boil them in salted water until tender, about 15 to 20 minutes. Drain the water and return the potatoes to the pot. Mash the potatoes, then stir in milk, sour cream, shredded cheddar cheese, and chopped chives until smooth and creamy.
  7. Serve: Spoon a generous portion of the creamy mashed potatoes onto each plate and ladle the apple cider beef stew over the top. Garnish with additional chives if desired and serve warm.

Notes

  • Use fresh apple cider for the best natural sweetness and flavor in the stew.
  • To make this recipe gluten-free, substitute the all-purpose flour with a gluten-free flour or cornstarch slurry.
  • For extra depth of flavor, consider adding a splash of Worcestershire sauce or a sprig of thyme before baking.
  • Leftovers can be cooled and refrigerated for up to 3 days or frozen for up to 2 months.
  • If you prefer a thicker stew, simmer uncovered on the stovetop for an additional 15 minutes before serving.
