Cake Ingredients

  • 2 whole oranges
  • ⅔ cup honey

  • ½ cup fresh orange juice

Instructions

  1. Boil Oranges: Rinse the whole oranges thoroughly under running water to clean them. Place them in a pot and cover completely with water. Bring to a gentle simmer and cook for one hour until the oranges soften completely.
  2. Blend Oranges: Drain the cooked oranges and carefully transfer them to a blender. Blend until you achieve a velvety smooth puree without any lumps or large pieces.
  3. Get the Oven Ready: Preheat your oven to 350°F (175°C). Lightly grease a 9-inch springform pan with oil or butter to prevent sticking.
  4. Stir the Batter: In a large mixing bowl, combine the orange puree, ⅔ cup honey, eggs, almond flour, ground pistachios, baking soda, and vanilla extract. Mix thoroughly until the batter is smooth and homogenous.
  5. Bake It: Pour the batter into the prepared pan and bake for around 60 minutes. Monitor the cake’s top; if it browns too quickly, loosely cover it with foil. The cake is done when a toothpick inserted into the center comes out clean.
  6. Cook the Glaze: While the cake bakes, combine 2 tablespoons honey and ½ cup fresh orange juice in a small saucepan. Bring to a boil, then reduce heat and simmer until the mixture reduces by half and thickens slightly. Remove from heat and let cool.
  7. Glaze and Serve: When the cake has cooled enough to handle but is still slightly warm, brush the glaze evenly over the surface. Allow the cake to cool completely in the pan before removing and serving. Enjoy!
