Ingredients

Scale

Dough Ingredients

  • 1 cup (237 g) water, warmed (about 110°-115°F)
  • 1 teaspoon active dry yeast
  • 2 tablespoons granulated sugar
  • ⅓ cup (75 g) extra virgin olive oil
  • 1 tablespoon Italian seasoning
  • 2 teaspoons garlic, minced
  • ½ teaspoon kosher salt
  • 2 ½ cups (312.5 g) all-purpose flour

Topping and Finishing Ingredients

  • 2 teaspoons extra virgin olive oil, divided
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ cup (25 g) parmesan cheese, grated

Instructions

  1. Activate Yeast: In a large bowl, combine the warm water, active dry yeast, and granulated sugar. Stir gently and let the mixture rest for about 5 minutes, or until the yeast blooms and becomes foamy.
  2. Prepare Olive Oil Mixture: In a small bowl, whisk together ⅓ cup olive oil, Italian seasoning, minced garlic, and ½ teaspoon kosher salt until well combined.
  3. Combine Yeast and Oil Mixture: Pour half of the olive oil mixture into the yeast mixture and stir to combine. Set the remaining oil mixture aside for later use.
  4. Add Flour: Gradually add the all-purpose flour to the yeast and oil mixture, stirring until the dough begins to form and pull away from the sides of the bowl.
  5. Let Dough Rise: Transfer the dough to a greased bowl and cover with a clean towel. Let it rise in a warm place for about 1 hour, or until it has doubled in size.
  6. Preheat Oven: Preheat your oven to 450°F (232°C).
  7. Prepare Baking Dish: Pour the remaining olive oil mixture into a 7×11-inch baking dish. Use a pastry brush to coat the bottom evenly with the oil.
  8. Shape Dough: Transfer the risen dough to the prepared baking dish. Press and stretch the dough evenly to the edges of the pan. Use your fingers to create dimples all over the surface of the dough.
  9. Slice Dough: Using a pizza cutter or sharp knife, make 3 equally spaced slices across the short side of the pan, then slice down the center lengthwise to create 8 breadsticks.
  10. Brush With Olive Oil: Brush the top of the breadsticks with about 1 teaspoon of olive oil.
  11. Season Breadsticks: Sprinkle the garlic powder and ½ teaspoon kosher salt evenly over the top of the breadsticks.
  12. Bake: Bake in the preheated oven for 18-20 minutes, or until the breadsticks turn golden brown and crisp on the outside.
  13. Finish and Serve: Immediately after baking, brush the tops of the breadsticks with the remaining olive oil and sprinkle with grated parmesan cheese. Serve warm for the best taste.

Notes

  • For a crispier crust, you can bake a few minutes longer but watch closely to prevent burning.
  • Use fresh yeast and warm water to ensure proper yeast activation.
  • You can substitute parmesan cheese with pecorino or omit for a dairy-free option.
  • These breadsticks pair wonderfully with marinara sauce or your favorite dip.
  • If you want a softer texture, cover the breadsticks with foil after baking and let them rest for 5 minutes before serving.
