For the Shrimp
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper, to taste
For the Creamy Garlic Sauce
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon Dijon mustard (optional)
- Salt and pepper, to taste
- Fresh thyme leaves (for garnish)
For the Mashed Potatoes
- 2 lbs potatoes, peeled and cubed
- ½ cup warm milk
- ¼ cup butter
- Salt, to taste
- Make the Mashed Potatoes: Boil the peeled and cubed potatoes in salted water until fork-tender, about 15 minutes. Drain well and return to the pot. Mash with butter and warm milk until smooth and creamy. Season with salt to taste, then cover and keep warm.
- Cook the Shrimp: Toss the shrimp with olive oil, paprika, garlic powder, salt, and pepper. Heat a large skillet over medium-high heat and cook shrimp for 2–3 minutes per side until pink and just cooked through. Remove shrimp from skillet and set aside. Avoid overcrowding the pan by cooking in batches if necessary.
- Make the Creamy Garlic Sauce: In the same skillet, melt butter and sauté minced garlic until fragrant, about 1 minute. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and Dijon mustard if using. Season with salt and pepper and let simmer for 3–5 minutes until slightly thickened.
- Assemble the Dish: Spoon the mashed potatoes onto plates. Top with cooked shrimp, then drizzle the creamy garlic sauce over. Garnish with fresh thyme leaves. Serve immediately while warm and creamy.
Notes
- Warming the milk before adding it to the mashed potatoes helps maintain a smooth and fluffy texture rather than a gluey one.
- Do not overcrowd the skillet when cooking shrimp to ensure even searing and prevent steaming.
- Optional: Add a splash of white wine or a pinch of red chili flakes to the garlic sauce for enhanced flavor.
- Serve immediately to enjoy optimal texture and flavor.
