Chocolate Pudding Layer
- 1 (5.9-ounce) box instant chocolate pudding
- 2 1/2 cups whole milk
- 1/2 cup Cool Whip (defrosted)
- 6 graham crackers (broken in half, divided)
Cream Cheese Marshmallow Layer
- 5 ounces cream cheese (at room temperature)
- 7 ounces marshmallow creme
- 2 cups Cool Whip (defrosted)
- pinch of salt
- 6 graham crackers (broken in half, divided)
- Line the Baking Dish: Line a 9×13-inch baking dish with parchment paper, leaving extra parchment overhang to easily lift out the frozen s’mores later.
- Prepare the Pudding Layer: In a medium bowl, whisk together the instant chocolate pudding mix, whole milk, and 1/2 cup of Cool Whip until smooth and creamy.
- Assemble Base Layer: Arrange half of the graham crackers evenly across the bottom of the prepared baking dish. Spread the chocolate pudding mixture evenly over the graham crackers, then place the dish in the refrigerator to chill and set.
- Make the Cream Cheese Marshmallow Mixture: In another medium bowl, beat the cream cheese and marshmallow creme together until smooth. Gently fold in the remaining 2 cups of Cool Whip along with a pinch of salt until fully combined.
- Assemble Top Layer: Spread the cream cheese marshmallow mixture evenly over the chilled chocolate pudding layer. Then arrange the remaining graham crackers on top to form the final layer.
- Freeze: Cover the baking dish with foil and freeze for at least 6 hours, or until firm enough to be cut into squares.
- Slice and Serve: Use the parchment overhang to lift the frozen s’mores from the dish onto a cutting board. Slice into 12 squares using the graham crackers as a guide, trimming any excess frozen filling from the edges. Enjoy immediately after softening slightly at room temperature for about 15 minutes, or store in a freezer-safe bag for later.
Notes
- For best results, allow the s’mores to soften at room temperature for about 15 minutes before serving to make slicing easier and enhance the texture.
- You can substitute light or non-dairy Cool Whip if desired, but it may affect the texture slightly.
- Ensure the cream cheese is at room temperature to achieve a smooth mixture without lumps.
- Use good quality chocolate pudding mix for richer flavor.
- This dessert is perfect for make-ahead parties or summer gatherings.
