Instructions

  1. Cook Tortellini: Bring a large pot of salted water to a boil. Add the fresh cheese tortellini and cook according to package directions until al dente. Before draining, reserve 1 cup of the pasta water. Drain the tortellini and set aside.
  2. Steam Broccoli: Steam the broccoli florets for 3-4 minutes until they are bright green and crisp-tender. Immediately plunge them into ice water to halt the cooking process, then drain and set aside.
  3. Cook Chicken: Season the cubed chicken breast with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken pieces until golden brown on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  4. Prepare Sauce: In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant but not browned. Slowly pour in the heavy cream while whisking constantly to combine.
  5. Add Parmesan: Remove the skillet from heat and gradually whisk in the freshly grated Parmesan cheese until the sauce becomes smooth and creamy. Season the sauce with salt and pepper to taste. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.
  6. Combine and Serve: Return the cooked chicken to the skillet, then add the cooked tortellini and steamed broccoli. Gently toss everything together until well coated with the creamy Parmesan sauce. Serve immediately, garnished with extra Parmesan cheese if desired.
