Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 1.5 cups cooked black beans, drained & rinsed (about 15 oz can)
  • 1/3 cup non fat Greek yogurt
  • 1/4 teaspoon salt (optional)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro leaves (optional)
  • 1 tablespoon water (optional)
  • 3/4 cup cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (232°C) to prepare for baking the dip.
  2. Blend Ingredients: In a food processor or blender, combine olive oil, black beans, Greek yogurt, salt, cumin, chili powder, lime juice, cilantro, and optional water. Blend until smooth but not watery, adding water gradually to achieve a creamy consistency.
  3. Transfer to Baking Dish: Pour the blended bean mixture into an 8.5 x 6.5 inch or 8×8 inch baking dish, spreading it evenly.
  4. Add Cheese Topping: Sprinkle the shredded cheddar cheese evenly over the top of the bean dip.
  5. Bake the Dip: Place the baking dish in the preheated oven and bake for 15 minutes, or until the cheese is bubbling and melted.
  6. Optional Broil: For extra melted and slightly browned cheese, broil the dip on high for 1-2 minutes, watching closely to prevent burning.

Notes

  • Use low-fat or non-fat Greek yogurt to keep the dip healthy without compromising creaminess.
  • Adjust salt and spices to taste depending on your preference.
  • Optional cilantro adds fresh herbal notes but can be omitted if disliked.
  • If you want a thinner dip, add water gradually while blending until desired consistency is reached.
  • Serve with tortilla chips, vegetable sticks, or use as a spread on sandwiches and wraps.
