Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350ºF (175ºC). Line or grease an 8×8 inch baking pan with parchment paper or nonstick spray and set aside.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs, pumpkin puree, pure maple syrup, coconut sugar, melted coconut oil, and vanilla extract until smooth and well combined.
  3. Add Dry Ingredients: Gradually add the homemade oat flour, rolled oats, pumpkin pie spice, and baking soda to the wet mixture. Stir gently until just combined.
  4. Fold in Chocolate Chips: Gently fold in ½ cup of chocolate chips to the batter, distributing them evenly without overmixing.
  5. Pour and Top: Pour the batter evenly into the prepared baking pan. Sprinkle additional chocolate chips on top for extra texture and flavor.
  6. Bake: Bake for 24 to 26 minutes, or until a toothpick inserted into the center comes out clean and the bars have a golden brown color on top.
  7. Cool and Serve: Allow the bars to cool in the pan for at least 10 minutes before cutting into squares. Enjoy warm or at room temperature!
