Ingredients

Scale

Fresh Ingredients

  • 2 lbs fresh strawberries, hulled
  • Whipped cream, store-bought or homemade, as needed
  • 1 lb shortcake or pound cake, cut into 1-inch cubes

Optional Ingredients

  • Chocolate sauce, for drizzling
  • Fresh mint leaves, for garnish
  • Wooden or metal skewers, as needed

For Homemade Shortcake (Optional)

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Shortcake (if making homemade): Preheat the oven to 375°F (190°C). In a large bowl, combine flour, sugar, baking powder, and salt. Cut in the softened butter until the mixture becomes crumbly. Stir in the milk and vanilla extract just until combined. Pour batter into a greased 9-inch round pan and bake for 25-30 minutes or until golden brown. Let cool completely before cutting.
  2. Prepare the Ingredients: Hull the strawberries and pat them dry. Cut the shortcake or pound cake into approximately 1-inch cubes to ensure easy assembly and eating.
  3. Assemble the Kabobs: Using wooden or metal skewers, thread strawberries and cake cubes alternately, leaving some space to accommodate whipped cream topping later.
  4. Add Whipped Cream: Once all kabobs are assembled, top each with a generous dollop of whipped cream either by piping or spooning directly onto the skewers.
  5. Add Optional Garnishes: Drizzle the kabobs lightly with chocolate sauce and add fresh mint leaves on top for an extra touch of flavor and presentation.
  6. Serve: Serve immediately for the freshest taste. If preparing ahead, keep refrigerated and assemble whipped cream and garnishes just before serving.

Notes

  • Use fresh, ripe strawberries for the best flavor and texture.
  • Homemade shortcake can be made in advance and stored in an airtight container.
  • Substitute pound cake if preferred; it won’t affect the overall taste but will add a denser texture.
  • Skewers can be soaked in water for 30 minutes if using wooden ones to prevent burning if you decide to lightly toast them.
  • For a vegan version, use coconut whipped cream and vegan cake alternatives.
