  • 2 8-ounce packages of cream cheese
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 16 ounces smoked gouda, shredded (divided)

Protein and Aromatics

  • 1 pound bacon, cooked and chopped (divided)
  • 3 scallions, chopped (divided)

Seasoning

  • Freshly ground black pepper to taste

Instructions

  1. Preheat Oven: Set your oven to 400°F (204°C) to prepare for baking the dip.
  2. Soften Cream Cheese: Place the cream cheese in a large bowl and microwave for 30 seconds until soft and easy to stir.
  3. Mix Creamy Ingredients: Add mayonnaise and sour cream to the softened cream cheese and whisk until the mixture is smooth and creamy but not liquidy.
  4. Reserve Toppings: Set aside 1/3 cup of shredded smoked gouda, 1/4 cup of cooked chopped bacon, and 2 tablespoons of chopped scallions for garnishing later.
  5. Combine Main Ingredients: Add the remaining shredded smoked gouda, chopped bacon, scallions, and freshly ground black pepper to the cream cheese mixture and stir well to combine all ingredients evenly.
  6. Transfer to Baking Dish: Pour the dip mixture into an ovenproof dish and evenly sprinkle the reserved cheese and bacon on top.
  7. Bake: Bake the dip in the preheated oven for 30 minutes or until the top is golden brown and the dip is bubbly and hot.
  8. Add Fresh Scallions: Remove the dip from the oven and immediately sprinkle the reserved chopped scallions over the top for freshness and color.
  9. Serve: Serve the dip immediately while warm with your choice of chips, crackers, or sliced vegetables.

  • Use freshly shredded smoked gouda for superior melting and flavor.
  • This dip is best served warm right after baking.
