Beef and Pepperoni Filling
- 2.2 lb lean ground beef (5% fat)
- 5.2 oz pepperoni, coarsely chopped
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp smoked paprika
- 2 tsp dried oregano
- 14 oz crushed tomatoes
- 2 tbsp tomato paste
- 0.5 oz flat-leaf parsley, chopped
- Salt and ground black pepper, to taste
- Spray oil
Assembly
- 6 wraps, any type
- 7.05 oz low-fat mozzarella cheese, shredded
- Sauce of your choice (optional)
- Additional spray oil for toasting
- Optional garnish: flat-leaf parsley, chopped
- Mix the Herbs and Spices: In a small bowl, combine 2 tsp onion powder, 2 tsp garlic powder, 2 tsp smoked paprika, and 2 tsp dried oregano. Mix thoroughly to blend the spices well, creating a flavorful seasoning for the beef and pepperoni filling.
- Brown the Beef: Heat a large pan over medium-high heat and spray with oil. Add 2.2 lb lean ground beef and season with salt and ground black pepper to taste. Cook for about 5 minutes, stirring occasionally until the beef is no longer pink and nicely browned.
- Cook with Pepperoni and Seasonings: Add the 5.2 oz coarsely chopped pepperoni and the mixed herbs and spices from Step 1 into the browned beef. Continue cooking for 2 more minutes, stirring occasionally, until the pepperoni becomes lightly golden and fragrant.
- Make the Tomato Filling: Add 14 oz crushed tomatoes, 2 tbsp tomato paste, and 0.5 oz chopped flat-leaf parsley to the beef and pepperoni mixture. Stir well to combine, bring the mixture to a simmer, and cook for 2–3 minutes to allow the sauce to thicken. Remove from heat once rich and not watery.
- Assemble the Wraps: Lay 6 wraps flat and evenly distribute the beef, pepperoni, and tomato mixture among them. Sprinkle 7.05 oz shredded low-fat mozzarella cheese over each wrap and drizzle with your favorite sauce, if desired. Roll each wrap tightly into a burrito-like shape. Optionally, add hot sauce for extra kick.
- Toast the Wraps: Place the wrapped burritos seam-side down on a baking tray or in an air fryer basket. Lightly spray them with oil and optionally sprinkle extra chopped flat-leaf parsley on top. Toast in a preheated oven at 200°C (400°F) for 8–10 minutes or air fry at 180°C (350°F) for 8–10 minutes until wraps are crispy and cheese is melted. Let cool for a few minutes before slicing or serving.
Notes
- You can use any type of wrap you prefer, such as whole wheat, low-carb, or gluten-free options.
- The sauce added inside the wraps is optional; consider marinara, spicy hot sauce, or ranch dressing for extra flavor.
- Wrapping tightly ensures the filling stays inside and the rolls crisp nicely during toasting.
- For best texture, serve the rolls immediately after toasting.
- Leftovers should be stored tightly wrapped in foil or sealed containers in the fridge and reheated before serving.
