Ingredients

Scale

Dry Ingredients

  • 2 cups almond flour
  • 1 teaspoon baking powder

Wet Ingredients

  • 1 cup golden monk fruit sweetener
  • 2 large eggs (or vegan substitutes – see notes)
  • 1/2 cup butter, softened (or dairy-free butter)
  • 1 teaspoon vanilla extract

Mix-ins

  • 1/2 cup keto chocolate chips
  • 1/2 cup mix-ins such as nuts, seeds, or chocolate chunks

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 180C (350F). Line an 8 x 8-inch baking pan with parchment paper to prevent sticking and set it aside.
  2. Mix Dry Ingredients: In a large mixing bowl, thoroughly combine the almond flour and baking powder. This forms the base of your blondie batter.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the golden monk fruit sweetener, eggs, softened butter, and vanilla extract until the mixture is smooth and combined.
  4. Combine Ingredients: Pour the wet ingredients into the dry ingredients and mix gently until just combined. Avoid overmixing to keep the blondies tender and moist.
  5. Add Mix-ins: Using a rubber spatula, fold in the keto chocolate chips and your preferred mix-ins such as nuts, seeds, or chocolate chunks evenly throughout the batter.
  6. Transfer Batter and Bake: Transfer the batter into the lined baking pan, spreading it evenly. Bake in the preheated oven for 20-25 minutes, or until a skewer inserted into the center comes out clean.
  7. Cool and Serve: Remove the blondies from the oven and allow them to cool completely in the pan. Once cooled, slice and enjoy your keto-friendly treat.

Notes

  • For vegan substitution, use flax eggs (1 tablespoon ground flaxseed mixed with 3 tablespoons water per egg) and dairy-free butter.
  • Ensure your chocolate chips are keto-friendly (sugar-free) to maintain low-carb status.
  • Store blondies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • Mix-ins can be customized to your preference including pecans, walnuts, pumpkin seeds, or extra chocolate chunks.
