Ingredients

Scale

Main Ingredients

  • 1 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 small onion (chopped)
  • 4 cups chicken stock
  • 4 oz can green chiles
  • 1/2 cup heavy whipping cream
  • 4 oz cream cheese (cubed)
  • 3 cups shredded rotisserie chicken

Spices

  • 1 tsp oregano
  • 1 1/2 tsp cumin
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)

Instructions

  1. Sauté Aromatics: Heat olive oil in a soup pot or Dutch oven over medium-low heat. Add the chopped onion and sauté until it begins to turn translucent. Then add the minced garlic and cook until the garlic starts to brown and the onions are translucent.
  2. Add Spices: Stir in oregano, cumin, salt, pepper, paprika, and cayenne pepper (optional). Sauté the mixture for 1 minute to toast the spices and release their aromas.
  3. Add Liquids and Chilies: Pour in the chicken stock and add the green chiles. Stir thoroughly and increase the heat to bring the mixture to a low boil.
  4. Simmer: Reduce the heat to maintain a gentle simmer. Let the chili cook uncovered for about 25 minutes, stirring occasionally, until the stock has reduced by at least one-third and flavors have concentrated.
  5. Add Cream and Chicken: Lower the heat to medium, then add the heavy whipping cream, cream cheese cubes, and shredded rotisserie chicken. Cook for 10-15 minutes, stirring occasionally, until the chili is heated through fully and the cream cheese has melted completely, creating a creamy texture.
  6. Serve: Remove the chili from the heat. Serve hot topped with optional garnishes like shredded cheese, sour cream, chopped cilantro, or sliced jalapeños according to your preference.

Notes

  • For a spicier chili, increase or do not omit the cayenne pepper.
  • Use rotisserie chicken for convenience, or cook and shred your own chicken breast or thighs.
  • The chili thickens as it simmers; if you prefer a thinner consistency, add more chicken stock as needed.
  • Garnish with low-carb toppings to keep this recipe keto-friendly.
  • This recipe is naturally gluten-free and suitable for a ketogenic lifestyle.
