Instructions

  1. Sauté Vegetables: Heat oil in a large pot over medium heat. Add diced onion and carrots, cooking for 5 minutes until softened. Add minced garlic, turmeric, and cumin, stirring for another minute until fragrant to release the spices’ aroma.
  2. Add Lentils: Add red lentils to the pot, stirring to coat them with the spice mixture. Pour in the vegetable broth and bring the mixture to a boil, ensuring lentils start absorbing flavor.
  3. Simmer Soup: Reduce heat to low and cover the pot. Let the soup simmer for 20 to 25 minutes, stirring occasionally, until the lentils break down and the soup thickens to your desired consistency.
  4. Add Lemon: Remove the pot from heat. Stir in the fresh lemon juice thoroughly. Season with salt and pepper to taste, adjusting the lemon juice as necessary for the perfect balance of brightness.
