Ingredients

Scale

Steak and Marinade

  • 1 lb sirloin steak (about 1-inch thick)
  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper

Grains and Toppings

  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional for paleo or keto)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled; optional for dairy-free)
  • ¼ cup fresh herbs (parsley or dill, chopped)

Tzatziki Sauce

  • 1 cup plain Greek yogurt (or coconut yogurt for dairy-free)
  • ½ cucumber (grated and squeezed dry)
  • 1 tbsp fresh lemon juice
  • 1 garlic clove (minced)
  • 1 tbsp fresh dill (chopped)
  • Salt & pepper (to taste)

Lemon Vinaigrette Dressing

  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp honey (omit for Whole30)
  • 1 garlic clove (minced)
  • ½ tsp dried oregano
  • Salt & pepper (to taste)

Instructions

  1. Marinate Steak: In a bowl, combine 3 tbsp olive oil, minced garlic, 1 tbsp lemon juice, dried oregano, dried thyme, salt, and black pepper. Coat the sirloin steak well with the marinade. Cover and refrigerate for at least 30 minutes and up to 4 hours to allow flavors to infuse.
  2. Make Tzatziki: In a separate bowl, mix together the Greek yogurt, grated and squeezed cucumber, lemon juice, minced garlic, chopped dill, and salt and pepper to taste. Chill the tzatziki in the refrigerator to let the flavors meld while you prepare the other components.
  3. Make Dressing: Whisk together olive oil, lemon juice, honey (if using), minced garlic, dried oregano, salt, and pepper until well emulsified. Adjust seasoning if necessary and set aside.
  4. Cook Steak: Heat a skillet over medium-high heat. Remove the steak from the marinade and sear in the hot skillet for about 4 to 5 minutes on each side for medium-rare, or cook to your desired level of doneness. Once cooked, let the steak rest for 5 minutes before slicing thinly against the grain.
  5. Assemble Bowl: In serving bowls, start with a base of cooked grains. Layer sliced steak on top, then add roasted chickpeas if using, cherry tomatoes, diced cucumber, sliced red onion, kalamata olives, crumbled feta cheese, and fresh herbs. Drizzle with the lemon vinaigrette and add a generous dollop of tzatziki. Serve immediately and enjoy a fresh and balanced Mediterranean meal.

Notes

  • For a paleo or keto option, omit grains and add roasted chickpeas or extra vegetables.
  • Use coconut yogurt to make the tzatziki dairy-free.
  • The steak can be marinated longer, up to 4 hours, for deeper flavor.
  • Adjust the lemon vinaigrette by omitting honey to make it Whole30 compliant.
  • Leftover components store separately in airtight containers for up to 3 days.
