Instructions

  1. Combine chocolate ingredients: Place the chopped Andes Mints, semi-sweet chocolate chips, and salted butter in a large, microwave-safe bowl.
  2. Melt the chocolate mixture: Microwave on high for 30 seconds and stir well. If chocolate is not fully melted, continue microwaving in 10 to 15 second increments, stirring after each until smooth. Be careful not to overheat.
  3. Coat the cereal: Add the Rice Chex cereal to the melted chocolate mixture and gently fold to evenly coat all the pieces.
  4. Add powdered sugar in stages: Sprinkle half of the powdered sugar over the coated cereal and shake the bowl vigorously to distribute sugar evenly. Then add the remaining powdered sugar and shake again.
  5. Shake to coat thoroughly: Seal the bowl with a lid or wrap tightly with aluminum foil and shake well until the cereal is uniformly coated with the powdered sugar. Break up any clumps gently and shake again as needed.
  6. Set the coated cereal: Spread the coated cereal out on a large sheet of aluminum foil or parchment paper and allow it to set completely at room temperature.
  7. Serve: Once set, transfer the puppy chow to a large serving bowl and gently fold in any optional mix-ins such as chopped mint-flavored cookies, additional Andes mints, or green M&Ms as desired for extra flavor and texture.
