Ingredients

Scale

Pie Crust

  • 1 Biscoff pie crust

Pie Filling

  • 8 ounces cream cheese, softened
  • 1 cup Biscoff cookie butter
  • 3/4 cup powdered sugar
  • 8 ounces Cool Whip (whipped topping)

Instructions

  1. Beat Cream Cheese and Biscoff Butter: In an electric mixer or with a hand mixer, beat the softened cream cheese and the Biscoff cookie butter until smooth and creamy, scraping the sides and bottom of the bowl occasionally to incorporate all ingredients evenly.
  2. Add Powdered Sugar: Add the powdered sugar to the mixture and continue beating until combined smoothly, making sure to scrape the sides and bottom of the bowl to ensure even mixing.
  3. Fold in Cool Whip: Remove the bowl from the mixer and gently fold in the Cool Whip using a spatula until the filling is light and fluffy, taking care not to deflate the whipped topping.
  4. Fill the Pie Crust: Transfer the creamy pie filling into the prepared Biscoff pie crust and smooth the surface with a spatula or the back of a spoon for an even finish.
  5. Chill the Pie: Cover the pie with plastic wrap and refrigerate or freeze it for at least 3 hours to allow the filling to set and flavors to meld before serving.

Notes

  • Ensure the cream cheese is fully softened for smooth mixing and a creamy texture.
  • Use a spatula rather than a mixer for folding in Cool Whip to maintain the airy texture.
  • The pie crust is pre-made, but you could also substitute with a graham cracker crust if preferred.
  • Chilling the pie longer than 3 hours will make it firmer and easier to slice.
  • Store leftovers covered in the refrigerator for up to 3 days.
