Instructions

  1. Prepare the Filling: In a bowl, mix the crumbled feta, ricotta, and thyme leaves until the mixture is smooth and evenly combined. Set the filling aside for assembly.
  2. Prepare the Phyllo: Cut each phyllo sheet in half lengthwise to create 12 strips total, and keep them covered with a damp towel to prevent drying out while you work.
  3. Assemble the Rolls: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Place a strip of phyllo on a clean work surface and brush it lightly with melted butter or olive oil. Spoon about 1 tablespoon of the cheese filling near one end of the strip, fold the sides inward, and then roll it up tightly.
