Ingredients
- 1 tablespoon oil (avocado or olive)
- 2 garlic cloves (minced)
- 1 2-inch knob fresh ginger root (grated)
- 1 cup uncooked white rice (Jasmine or Basmati)
- 2 cups fresh or frozen pineapple (chopped)
- 1 tablespoon sriracha
- 1 tablespoon coconut aminos (or soy sauce)
- 1 teaspoon coconut sugar
- 1 teaspoon salt
- ¼ teaspoon red chili flakes
- 1½ cups water
- Sauté Aromatics: Heat the oil in a medium pan over medium heat and sauté the minced garlic and grated ginger for about 5 minutes until fragrant, allowing the flavors to infuse.
- Toast Rice: Add the uncooked white rice to the pan and toast it by stirring frequently for 2 minutes to enhance its nutty flavor.
- Add Flavorings: Stir in chopped pineapple, sriracha, coconut aminos (or soy sauce), coconut sugar, salt, and red chili flakes, then sauté for an additional minute to combine the flavors.
- Cook Rice: Pour in the water and bring the mixture to a boil. Reduce the heat to medium-low, cover the pan, and simmer for about 15 minutes until all the water is absorbed and the rice is tender.
- Rest and Fluff: Remove the pan from heat and let the rice rest, covered, for 5 minutes. Then uncover and fluff the rice gently with a fork before serving.
Notes
- Use jasmine or basmati rice for best aroma and texture.
- Adjust the amount of sriracha and chili flakes based on your preferred spice level.
- For a vegan option, ensure coconut aminos or soy sauce used is free from animal products.
- Fresh pineapple adds the best texture but frozen pineapple works well too.
- Resting the rice after cooking helps achieve fluffy, separate grains.
