Roasted Garlic

  • 3 whole heads garlic

  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • Pinch of cayenne pepper (optional)

Instructions

  1. Roast the garlic: Preheat your oven to 425 degrees F (220 degrees C). Prepare the garlic heads by peeling off the outer white papery skin and slicing off the tops to expose the cloves inside.
  2. Prepare garlic for roasting: Place the garlic heads on a piece of foil. Drizzle each head generously with extra virgin olive oil and season with salt and freshly ground pepper. Wrap the foil tightly around the garlic heads and place them in a shallow baking dish or pan to catch any drippings.
  3. Roast until tender: Roast the garlic in the preheated oven for 40 to 60 minutes. The longer you roast, the darker and more deeply flavored the garlic will become. The cloves should be tender and browned when done.
  4. Cool and extract cloves: Remove the roasted garlic from the oven and allow it to cool enough to handle. Squeeze or use a paring knife to remove the softened cloves from their skins into a small bowl.
  5. Mash the garlic: Using a fork, mash the roasted garlic cloves into a smooth paste to ensure even flavor distribution in the aioli.
  6. Combine aioli ingredients: In a medium bowl, whisk together the mayonnaise, roasted garlic paste, Dijon mustard, lemon juice, Worcestershire sauce, and cayenne pepper (if using) until smooth and creamy.
  7. Season to taste: Taste the aioli and add salt and freshly ground pepper as needed to balance the flavors.
  8. Serve or store: Serve the aioli immediately as a dip or spread, or refrigerate it in an airtight container for up to 2 days. Garnish with chopped fresh herbs and an extra sprinkle of cayenne pepper if desired for presentation and added flavor.
