  • 1 large apple, peeled, cored and chopped (about 1 1/2 cups)
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, chopped
  • 1 cup mushrooms, chopped
  • 1 tbsp fresh sage, minced
  • 1/2 tbsp fresh thyme, minced
  • 1 cup cubed bread (roughly 23 slices)
  • 2 eggs, beaten
  • 1/4 cup milk (or substitute stock or water)
  • 1 tbsp olive oil
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Cooking twine

Instructions

  1. Prepare the Bacon Base: Lay 2 large pieces of plastic wrap on your work surface and arrange 5 slices of bacon on each piece of plastic wrap evenly.
  2. Assemble Turkey Layers: Remove the turkey scaloppine from one package and overlap them over the bacon slices on one piece of plastic wrap, forming an approximate 12” x 8” square. Repeat this layering with the second package of turkey on the other piece of plastic wrap and bacon.
  3. Make the Stuffing: In a large bowl, combine the chopped apple, dried cranberries, walnuts, chopped bacon slices, chopped mushrooms, minced sage, minced thyme, cubed bread, beaten eggs, milk, and season with salt and pepper. Toss everything together until well mixed and evenly combined.
  4. Fill and Roll Turkey: Divide the stuffing mixture in half. Spread each half evenly over each turkey-bacon square, leaving about a 1/4-inch border from the edges. Using the plastic wrap as a guide, carefully roll up each turkey square tightly, ensuring the stuffing stays inside and the bacon covers the exterior completely.
  5. Secure the Rolls: Tie each bacon-wrapped turkey breast roll securely with cooking twine to maintain their shape during cooking.
  6. Brown the Rolls: Preheat your oven to 350°F (175°C). Heat olive oil in a large ovenproof skillet over medium-high heat. Brown each turkey breast roll on all sides, about 2 to 3 minutes per side, until nicely colored.
  7. Roast in Oven: Transfer the skillet to the preheated oven and roast the turkey rolls uncovered for 30-40 minutes, or until the internal temperature reaches 165°F (74°C).
