Rice and Salmon
- 2 cups cooked white rice (sticky, freshly made)
- 1 large cooked salmon filet (or 2 small) (about 1 cup shredded)
Vegetables and Seasoning
- ½ cup finely chopped onions
- ½ cup finely chopped bell peppers
- 2 tbsp butter
- Salt, to taste (optional)
- Shred the salmon: Use a fork to flake the cooked salmon filets into small, bite-sized pieces. Set aside for mixing later.
- Sauté the vegetables: Melt the butter in a pan over medium heat. Add the chopped onions and bell peppers. Optionally season with paprika, garlic powder, black pepper, or your favorite seasoning blend such as Tony’s all-in-one seasoning. Cook until the vegetables are soft and translucent, then remove from heat and let cool while retaining all the cooking juices.
- Combine the ingredients: In a bowl, mix the cooked sticky rice, shredded salmon, and the sautéed onions and bell peppers with their juices. Stir thoroughly to combine evenly.
- Form rice balls: Scoop tablespoon-sized portions of the rice mixture. With slightly wet hands for easier shaping, firmly press and roll each portion into a compact ball. Alternatively, use a rice baller to help form uniformly sized rice balls by placing the mixture inside and shaking gently.
Notes
- Use freshly cooked sticky rice for the best texture and easier shaping.
- Wet your hands or use cooking spray when forming rice balls to prevent sticking.
- Feel free to customize the seasoning in the sautéed vegetables according to your taste preferences.
- These rice balls can be served warm or at room temperature, making them suitable for parties or lunchboxes.
- Salmon rice balls can also be served as is without shaping, as a simple mixed dish.
