Shrimp Scampi

  • 1 lb large shrimp (peeled and deveined)
  • 4 tbsp unsalted butter, divided
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/4 cup dry white wine (or chicken broth)
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley, plus more for garnish
  • Salt and pepper to taste

Garlic Bread

  • 4 thick slices of French or Italian bread
  • Garlic butter (made by mixing softened butter with minced garlic and parsley)

Instructions

  1. Prepare the Garlic Bread: Preheat the oven to 375°F (190°C). Spread garlic butter evenly on each slice of bread and arrange the slices on a baking sheet.
  2. Bake the Bread: Bake the bread slices in the preheated oven for 8-10 minutes or until golden brown and toasted. Remove from oven and set aside.
  3. Cook the Shrimp: In a large skillet, heat 1 tablespoon olive oil and 2 tablespoons butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Add Shrimp: Season the shrimp with salt and pepper. Add them to the skillet in a single layer and cook for 2-3 minutes per side, until the shrimp turn pink and opaque. Remove shrimp from skillet and set aside.
  5. Make the Sauce: In the same skillet, add 1 tablespoon butter and pour in the white wine or chicken broth. Let it simmer for 1-2 minutes to reduce slightly.
  6. Add Flavorings: Stir in freshly squeezed lemon juice, red pepper flakes if using, and the remaining butter. Mix until the sauce is smooth and well combined.
  7. Toss Shrimp in Sauce: Return cooked shrimp to the skillet and toss gently to coat them evenly with the buttery garlic sauce. Sprinkle with chopped fresh parsley and stir gently.
