Ingredients

Scale

Chicken and Vegetables

  • 2 lbs boneless skinless chicken breast or thighs
  • 1 onion, thinly sliced

Marinade and Seasoning

  • ¼ cup chicken broth
  • 1 lemon, juiced (about 3 tablespoons)
  • 1 tablespoon olive oil
  • 4 garlic cloves, minced
  • 1 ½ teaspoons dried oregano
  • 1 ½ teaspoons dried thyme
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper

Instructions

  1. Prep: Prepare your ingredients by thinly slicing the onion and measuring out all seasonings and liquids.
  2. Layer Chicken and Onion: Place the chicken breasts or thighs at the bottom of the slow cooker. Spread the thinly sliced onion evenly over the chicken.
  3. Mix Marinade: In a small bowl, whisk together the chicken broth, lemon juice, minced garlic, olive oil, dried oregano, dried thyme, sea salt, and black pepper until well combined.
  4. Add Marinade: Pour the marinade mixture evenly over the chicken and onions in the slow cooker, ensuring all pieces are coated.
  5. Cook: Cover the slow cooker with its lid and cook on LOW for 5 to 6 hours or on HIGH for 3 to 4 hours. The chicken is done when it is tender and its internal temperature reaches 165°F (75°C).
  6. Shred Chicken: Once cooked, use two forks to shred the chicken directly in the slow cooker, allowing it to soak up the flavorful juices.
  7. Serve: Serve the shredded Greek chicken warm alongside rice, pasta, pita bread, or over a fresh Greek salad for a complete meal.

Notes

  • For best flavor, use bone-in thighs if possible, which will yield juicier meat.
  • You can prepare the chicken the night before and refrigerate it in the marinade for deeper flavor.
  • If you prefer a thicker sauce, remove the chicken after cooking, then reduce the cooking liquid on the stovetop until it thickens to your liking.
  • Adjust herbs and garlic to taste for a more or less intense flavor.
  • Leftovers keep well refrigerated for up to 3 days and can be used in wraps or sandwiches.
