For the Graham Crust
- 1 1/2 cups graham cracker crumbs (about 150g)
- 6 tablespoons unsalted butter, melted (85g)
- 2 tablespoons granulated sugar (25g)
- Pinch of salt
For the Cookie Dough Filling
- 1 1/4 cups all-purpose flour (160g)
- 1/2 cup unsalted butter, softened (115g)
- 1/2 cup brown sugar, packed (100g)
- 1/4 cup granulated sugar (50g)
- 1 large egg
- 2 teaspoons pure vanilla extract (10ml)
- 1/2 teaspoon baking soda (3g)
- 1/4 teaspoon salt (1g)
- 3/4 cup chocolate chips (130g, semi-sweet and/or milk chocolate)
- 1/2 cup chocolate chunks (85g)
For the Topping
- 20–25 large marshmallows (about 180g, cut in half)
- 1 cup mini marshmallows (50g)
- Extra chocolate chips or shavings (optional, for topping)
- Preheat and Prepare Crust: Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or line it with parchment paper to ensure easy removal.
- Mix Graham Cracker Crust Ingredients: In a medium bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and a pinch of salt. Stir until the mixture resembles wet sand for easy pressing.
- Form and Bake Crust: Press the crumb mixture firmly into the bottom and up the sides of the prepared pie dish. Bake in the preheated oven for 7-8 minutes until the crust is just golden and set. Remove and let cool completely.
- Cream Butter and Sugars: In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until the mixture is light and fluffy, about 2-3 minutes using an electric mixer.
- Add Egg and Vanilla: Beat in the egg and vanilla extract until the batter is smooth and combined, ensuring an even texture.
- Combine Dry Ingredients: In a separate bowl, whisk flour, baking soda, and salt together to evenly distribute the leavening agents and seasoning.
- Mix Dry into Wet Ingredients: Gradually add the dry ingredients to the wet mixture, stirring gently just until combined—do not overmix to avoid a tough texture.
- Incorporate Chocolate: Fold in the chocolate chips and chocolate chunks evenly throughout the dough to ensure pockets of melted chocolate in every bite.
- Assemble Cookie Dough Layer: Spread the cookie dough evenly over the cooled graham cracker crust, smoothing the surface for an even bake.
- Bake Cookie Dough Layer: Bake in the oven for 22-25 minutes until the edges turn golden and the center is just set but still slightly soft. Remove and allow to cool for 10 minutes.
- Add Marshmallow Topping: Arrange the halved large marshmallows cut side down alongside the mini marshmallows evenly over the top of the warm cookie dough layer, covering it completely.
- Broil Marshmallows: Place the pie under the broiler for 1-2 minutes, watching carefully. Rotate as needed to achieve a golden, toasted finish on the marshmallows. Be vigilant to prevent burning.
- Final Touch and Serve: Sprinkle extra chocolate chips or chocolate shavings on top for added texture and flavor. Allow the pie to cool for at least 20 minutes before slicing. Serve slightly warm to enjoy the gooey, melted marshmallow and chocolate texture.
Notes
- Keep a close eye on marshmallows while broiling—they can burn quickly.
- For a more chocolatey pie, add extra chocolate chunks in the dough or as a drizzle after baking.
- Ensure the graham cracker crust is fully cooled before spreading cookie dough to prevent it from melting or becoming soggy.
- Serve the pie warm for the best gooey texture; leftovers can be heated briefly in the microwave.
- This pie is best enjoyed within 2 days but can be stored covered at room temperature.
