Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 2 tablespoons butter (divided)

Sauce

  • 1 medium onion (sliced)
  • 1 clove garlic (minced)
  • 1/2 cup chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1 cup sour cream (full-fat)
  • Fresh chopped parsley (optional, to taste)

Instructions

  1. Prepare the Chicken: Cut the chicken breasts in half lengthwise to create 4 thinner pieces. Season both sides with garlic powder, salt, and pepper to taste.
  2. Heat the Pan: Add olive oil and 1 tablespoon of butter to a skillet. Heat over medium-high for a few minutes until hot.
  3. Cook the Chicken: Place the chicken pieces in the skillet and cook for 5-6 minutes per side, or until golden brown and cooked through to an internal temperature of 165°F. Remove the chicken and set aside on a plate.
  4. Sauté the Onions: Lower the heat to medium and add the remaining tablespoon of butter to the skillet. Add the sliced onion and sauté until softened and lightly browned, about 10-15 minutes, adjusting heat as needed to prevent burning.
  5. Add Garlic: Stir in the minced garlic and cook for 30 seconds until fragrant.
  6. Deglaze the Pan: Pour in the chicken broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan to incorporate flavor.
  7. Add Sour Cream: Stir in the sour cream carefully until the sauce is smooth. Heat gently for a couple of minutes, avoiding boiling to prevent curdling.
  8. Combine and Serve: Return the cooked chicken to the skillet, spoon the sauce over the top, and season with additional salt and pepper if needed. Garnish with fresh chopped parsley and serve immediately.

Notes

  • Use full-fat sour cream to ensure a creamy, rich sauce.
  • Do not let the sauce boil after adding sour cream, as it can cause curdling.
  • Adjust seasoning at the end to balance the flavors.
  • Chicken breasts can be substituted with thighs if preferred, adjusting cooking time accordingly.
  • Serve with rice, mashed potatoes, or crusty bread to enjoy the sauce fully.
