Ingredients

Scale

Noodles

  • 16 ounces brown rice noodles

Sauce

  • 3 large cloves garlic (or 45 small), finely minced
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon oil (olive or any preferred oil)
  • 2/3 cup creamy peanut butter (low/no salt)
  • 4 tablespoons low sodium tamari or soy sauce
  • 1/3 to 1 cup hot water
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 to 2 tablespoons sriracha
  • 1 to 2 tablespoons maple syrup or honey
  • 1/2 teaspoon red pepper flakes (optional, for less spice can be omitted)
  • Optional: 2 teaspoons chili garlic sauce

Toppings (Optional)

  • Crushed peanuts
  • Scallions
  • Additional red pepper flakes

Instructions

  1. Cook the noodles: Bring a large pot of water to a boil. Add the brown rice noodles and cook according to package instructions until tender. Drain and set aside.
  2. Sauté garlic: Finely mince the garlic cloves. Heat 1 tablespoon of oil in a sauté pan over low heat. Add the garlic and cook gently for about 2 minutes until golden brown, releasing its aromatic flavor.
  3. Add ginger: Add the freshly grated ginger to the pan with garlic. Sauté together for 1 more minute to blend the flavors, then remove the pan from heat.
  4. Make the sauce: Into the warm pan with garlic and ginger, add the creamy peanut butter, low sodium tamari (or soy sauce), rice vinegar, toasted sesame oil, sriracha, maple syrup (or honey), red pepper flakes, and chili garlic sauce if using. Start by adding 1/3 cup hot water and whisk thoroughly until the sauce becomes smooth and creamy. Add more hot water up to 1 cup as needed to reach your desired sauce consistency.
  5. Taste and adjust: Taste the sauce and adjust seasoning by adding more tamari for saltiness, more sriracha for heat, or sweetener according to preference.
  6. Toss noodles with sauce: Place the cooked noodles in a large bowl. Add about half of the sauce and toss to coat evenly. You can add more sauce as you like to reach your preferred level of sauciness.
  7. Serve: Serve the noodles garnished with crushed peanuts, chopped scallions, and extra red pepper flakes if desired. These noodles pair well with steamed or grilled vegetables and your choice of protein such as tofu, chicken, or shrimp for a complete meal.

Notes

  • Use hot water to help the peanut butter incorporate smoothly into the sauce.
  • Adjust spice level by varying the amount of sriracha and red pepper flakes used.
  • Low sodium tamari or soy sauce helps control the salt content.
  • Make extra sauce for use as a dip or dressing for salads and veggies.
  • This recipe is naturally vegetarian and can be made vegan by choosing maple syrup instead of honey.
  • Brown rice noodles offer a gluten-free option, but verify package labels to ensure no gluten cross-contamination.
