  • 2 tsp dried parsley
  • Salt & pepper (to taste)

Optional

  • 1/4 cup artichoke hearts (diced)

Instructions

  1. Sauté Spinach: Heat a non-stick pan over medium heat and add the fresh baby spinach. Stir occasionally and cook just until the spinach wilts, being careful not to overcook it or make it mushy. Remove from heat and let it cool completely.
  2. Prepare Dressing: In a large mixing bowl, combine the sour cream, mayonnaise, garlic powder, onion powder, dried parsley, salt, and pepper. Stir well until all ingredients are evenly blended.
  3. Combine Ingredients: Add the cooled sautéed spinach and diced artichoke hearts (if using) to the dressing mixture. Stir until all elements are uniformly incorporated.
  4. Add Pasta: Pour the cooked and cooled penne pasta into the spinach dip mixture. Stir gently to coat the pasta evenly with the creamy dressing.
  5. Chill: Cover the bowl with plastic wrap and refrigerate for at least four hours or preferably overnight. This allows the flavors to meld and the salad to chill thoroughly.
  6. Serve: Before serving, give the salad a final stir and adjust seasoning with additional salt and pepper if needed. Serve cold as a delicious, creamy pasta salad side dish.
