Steak Bites
- 1 lb well-marbled sirloin steak, cut into bite-sized pieces
- Salt and pepper, to taste
- 1 tablespoon unsalted butter
Potatoes
- 1 lb baby potatoes, halved or quartered
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
Garlic Butter Sauce
- 1 tablespoon unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- Sauté the Potatoes Until Golden: Heat a large skillet over medium heat and add 1 tablespoon butter with olive oil. Once melted, add the diced baby potatoes and season with salt, pepper, rosemary, and thyme. Cook undisturbed for a few minutes at a time, stirring occasionally, for 10-12 minutes until fork-tender with golden, crispy edges. Remove and keep warm.
- Sear the Steak Bites: In the same skillet, add 1 tablespoon butter. Arrange the steak pieces in a single layer, seasoning with salt and pepper. Sear each side for 2-3 minutes until a nice brown crust forms and the steak reaches your desired doneness. Remove and set aside.
- Make the Garlic Butter Sauce: Lower the heat, add the last tablespoon of butter to the pan, and stir in the minced garlic. Cook, stirring constantly, for about a minute until the garlic is lightly golden and fragrant.
- Toss It All Together: Return the steak bites and potatoes to the skillet and gently toss to coat everything evenly in the garlic butter sauce. Turn off the heat, sprinkle with fresh parsley, and serve warm.
Notes
- For best results, ensure the steak pieces are dry before searing to achieve a better crust.
- You can substitute baby potatoes with fingerling potatoes if desired.
- Adjust garlic quantity according to your preference for a milder or stronger garlic flavor.
- Work in batches if your skillet is small to avoid overcrowding and steaming the steak rather than searing.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently in a skillet.
